Verve blends fresh, wholesome smoothies that beat the summer sizzle
Cucumber-Coconut Smoothie

Ingredients:

  • Small cucumbers
  • 2 nos (approx 1 1/4 cups after grating)
  • Coconut milk 1/4 cup
  • Soy milk
  • 2 1/4 cups
  • Ice cubes 5-6 nos
  • Vanilla essence, 1 tsp
  • Soy yogurt (any kind, optional);
  • Finely chopped rosemary.
Method:

Finely grate the cucumbers, then add all the ingredients into the blender. Set the blender to ‘ice crush’ (or the highest setting available) and blend for 40-60 seconds. Serve with coconut cream.

Serves: 5.
Preparation time: Approximately 10 minutes.
