Mixed Vegetable Pie

Ingredients:

  • Cherry tomatoes (sliced) 100 gm
  • Asparagus 100 gm
  • Baby corn 100 gm
  • Spring onions (chopped) 1 cup
  • Broccoli (chopped) 1 cup
  • Mushrooms (sliced) 1 cup
  • Breadcrumbs 1 cup
  • Butter 1/2 cup
  • Garlic (crushed) 2 cloves
  • Sesame seeds 1 tsp
  • Onion seeds 1 tsp
  • Red chillies (chopped) 1 tsp
  • Salt (to taste).

Method:

Toss each vegetable individually as follows in butter – tomatoes with garlic, asparagus with butter, baby corn with sesame, broccoli with garlic, spring onions with chillies, mushrooms with onion seeds. Prepare a pie dish (star shaped) with a lining of the breadcrumbs and butter. Freeze to maintain shape. Individually place each veggie in a separate star section and bake for 10 min at 180oC.
